JOB SUMMARY:

This position is responsible for the operation, safety, and sanitation compliance of the ASPC - Eyman kitchen and inmate stores.

JOB DUTIES: 

-          Ensures proper nutritional meals and meal portion standards are met

-          Prepares weekly meal projections

-          Issues Medical and Religious Diet Cards

-          Ensures the Food Service Vendor complies with the Food Service Contract; ensures the Inmate Store vendor complies with the commissary contract

-          Reviews and analyzes invoices for accuracy; reconciles and addresses discrepancies

-          Prepares statistical reports

-          Writes inspection findings and vendor deficiency reports

-          Monitors Inmate Store daily operations including the timely delivery of unexpired and undamaged goods

-          Works with the Arizona Department of Corrections Rehabilitation and Reentry (ADCRR) Security to maintain proper  custody, safety and security standards are applied to tool, product and key control

-          Resolves problems and disputes between inmates and contractors

-          Serves as liaison between Food Service Contractor, Inmate Stores Contractor and ADCRR Management

-          Analyzes and evaluates validity of change in scope of services for contract changes; participates in the establishment of guidelines and policies

-          Drives on S business

-          Performs other duties appropriate to the assignment

 

SPECIAL SELECTION FACTOR(S) – THE FOLLOWING ARE REQUIRED:

Requires possession of, and ability to retain a current, valid state-issued driver’s license appropriate to the assignment. Employees who drive on state business are subject to driver’s license record checks, must maintain acceptable driving records and must complete any required driver training (see Arizona Administrative Code R2-10-207.12).

KNOWLEDGE, SKILLS AND ABILITIES (KSAs):

Knowledge of:

-          ServSafe standards for food service operations

-          Food volume preparation and delivery systems

-          Nutrition, nutritional values and special diets

-          Health, safety and sanitation codes for food/stores

-          Auditing and statistical sampling techniques

-          Proper grammar usage

-          Personal computers and associated software usage

Skill in:

-          Contract negotiation

-          Written and verbal communication

-          Organization, time management, multi-tasking and adapting to changing priorities

-          Report writing

-          Building and maintaining interpersonal relationships

 

Ability to:

-          Learn and adhere to department policies and procedures

-          Establish cooperative relationships with all levels of the department and outside individuals

-          Monitor and evaluate food service activities

-          Adapt to changing situations and priorities

-          Maintain records

-          Work in a prison environment
